What is it? a fat-reducing silicone cooking mat

What does it claim? that the 556 non-stick silicone pyramids allow fat to drip away and air to circulate under the food leaving it crispy, juicy and evenly cooked

Who tested it? Norfolk resident Peggy Moore. She met us at East Beach Catering so we could use the oven there to truly put the Pyramid Pan to the 'Does it Work?' test.

What Are The Instructions? Before your first use, wash Pyramid Pan thoroughly in warm, soapy water. Then rinse and dry it.

The makers say the pan may produce a small amount of smoke during the first few uses at temperatures about 350 degrees, but it will decrease over time.We didn't experience that, however.

The cooking mat insert can be used with a baking sheet or pan. Since it's silicone and flexible, that makes it easier and more sturdy to use.

Pre-heat your oven to temperature you need, but do not exceed temperatures of more than 428 degrees in a conventional oven. It's important to note that you may need to increase recipe temperatures by 25 degrees when using the Pyramid Pan.

Keep in mind that foods may need longer cooking times than with traditional baking sheets.

Once you've placed your Pyramid Pan with the points-side facing up onto a heat-resistant baking pan or sheet, you're ready to get cooking. Place food items on top of 'pyramids' and bake according to recipe instructions. If you are looking for crispier results, spray both sides with cooking spray. It can make breaded food crispy without having it sit in oil.

It's important to note that Pyramid Pan should never be used on a stove top, under the broiler, on a hotplate or over an open flame. Itcan be used in the microwave.

Did it work? Moore thought it did a pretty good job. She tried it with bacon and she admits she likes her bacon very crispy. Normally, she puts her bacon on a baking pan with parchment paper to try and soak up some of the oil. She put it on the Pyramid Pan and tried to achieve the same crispy texture. It took a little longer and didn't get as crispy as she liked. She was okay with that because she saw how much of the oil it took away from her food. She said it may not be as crispy, but Moore felt like it was a little better for her. Her favorite part was the super easy clean up. She also liked the fact that you could roll it up and it takes up very little storage space in your kitchen.

Additional Comments:
Because the Pyramid Pan allows air to circulate around food, you don't need to flip food as frequently. It's non-stick surface makes clean-up easy and you can hand wash with warm soapy water or place it in the dishwasher.
