NORFOLK -- A Norfolk business is growing and expanding, despite the tough economy.

Dr. Lucy's, an allergy-free cookie company, has products in more than 1,000 stores across the country.

On Tuesday, the products went on sale inside 6,000 Starbucks; in a few more weeks, Harris Teeter will begin selling the cookies. They're already available in Farm Fresh supermarkets.

The cookies are made without peanuts, tree nuts, milk, eggs, wheat or gluten.

Lucy's son has food allergies, so what began as a way of getting him a treat, grew into a business.

'In the current economic situation, it's been really exciting to provide jobs. Over the past year, our staff in terms of number of people, has grown four fold,' said Dr. Lucy Gibney.


In March, Dr. Lucy's cookie factory will nearly double in size, moving into a 12,000 square foot building.
